You can break into his apartment later while he's at work. Surely he won't be suspicious about the timing. We're being incredibly nice by meeting him and absolving him of his guilt.
Leave a little plastic shoe somewhere. He'll drive himself crazy for an evening trying to figure out which doll it came from, and where the other shoe is.
Now picture this: he's working late at the bar. He's counting down the minutes to closing time. Out of the corner of his eye, he sees it. A pink plastic shoe sitting on the bar top, twin to the one he found a few days ago. A customer calls for his attention. He turns back, and the shoe is gone.
